Graduate Profiles
Shannon College currently has over 1,400 graduates managing top-class hotels internationally. The enviable success of our graduates has much to do with the enthusiasm and expertise that they bring to their work and the professional training and placement they receive during their four years of degree studies.

Nick Logue
Not many people can boast of attaining a senior management position prior to graduation as Nick Logue did at the Palace Hotel Buxton, near Manchester in 1995. Nick was appointed Resident Manager of the Cheltenham Park Hotel, part of the Paramount Hotel Group in September 1996 and General Manager in 1998. The seeds of success were sown in his early days in Shannon. Nick was the recipient of the ‘Outstanding Student’ award in Both Year 1 and Year 3. Nick’s natural business acumen helped to secure retention of the I.H.C.I. Management Game trophy with his team-mates for Shannon in 1994. Graduation also proved to be a worthy platform for Nick’s success as he was the recipient of the Mõvenpick and Camus scholarships. After spending three years as General Manager of Le Meridien Selsdon Park Hotel and Golf Course, South Croydon, Nick returned home to take up the position of Executive General Manager with the South Court Hotel, Limerick. He currently holds the position of General Manager at Fitzpatrick’s Hotel in Killiney.

Aileesh Carew
Aileesh graduated from Shannon in 1987. In 1989, aged 23, she was appointed General Manager of Dalhousie Castle Hotel, Edinburgh. In 1991, she moved to Norton House Hotel as General Manager, where she received an Acorn Award – an annual award given within the hospitality industry for outstanding achievement to thirty managers under thirty. The lure of the Mediterranean beckoned in 1994 and Aileesh took over as General Manager of La Residencia, Virgin Hotels, Mallorca, a 5 star resort property with a turnover of £6 million sterling. She returned to Ireland in 1997 as General Manager of The Morgan, a 4 star contemporary boutique hotel in Dublin where she was involved in full pre-opening planning. In July 1998, she joined the Radisson Group and has since managed St. Helen’s Hotel SAS, Dublin, Radisson SAS, Brussels and the 5 star Radisson SAS Royal Hotel, Copenhagen, a 260 bedroom hotel. Aileesh is one of Shannon’s true ‘Euro-graduates’.

Seamus McGowan
When Seamus McGowan graduated from Shannon he had already secured a scholarship to Cornell University and an exchange programme to a resort in the Bahamas. He took up his first position after graduation with Marriott as a Food and Beverage Manager and was awarded Marriott Manager of the Year in 1989. Seamus returned to Ireland in 1990 and joined Jurys Hotel Group, as Rooms Division Manager and later Food and Beverage Manager of Jurys Hotel & Towers, Ballsbridge Dublin where in 1991 he was promoted to Deputy General Manager. In 1993, he transferred to Jurys Kensington Hotel in London as General Manager and was responsible for developing Jurys first themed bar and restaurant. Following four years of managing the Burlington Hotel in Dublin, Seamus was appointed Group General Manager of the Irish division of Jurys Doyle Hotel Group in 2000. Recently, Seamus and fellow Shannon College graduate, Richard O’Sullivan have taken the entrepreneurial route and have succeeded in acquiring the Travelodge franchise for Ireland.

Amberine Zaki
Amberine Zaki, originally from Lahore, Pakistan graduated from Shannon in 1996. She began her career as Personnel and Training Officer with Le Meriden Jumeria Beach, Dubai, a five star resort hotel with 350 bedrooms. She assisted with pre-opening an extension of 108 bedrooms in 1996. Two years later she was promoted to Personnel Manager, Le Royal Meridien Beach Resort & Spa, Dubai where she remained until December 2000. In February 2001 Amberine joined Jumeriah International as a Human Resource and Training Manager of the Jumeriah Beach Club, a 5 star residential and members beach club in Dubai, with an employee base of 260.
